At the end of September 2023, the famous restaurant “ Human beings everybody noodles ”, which is worthy of representing Japanese ramen, will reopen after renovation, and I went to try it right away!
Atmosphere
Compared to before the renovation, the atmosphere in the storefront was not particularly different, but inside the restaurant, the room where the noodle-making machine was located was gone, and there were more tables and seats. Because it was raining heavily that day, we were able to get in without waiting in line, but usually we had to wait in line for 15 to 30 minutes. With the renewal, the number of people accepted has increased and you will be able to eat comfortably without waiting too long.
Menu
Here is the menu list, but it is not easy to understand for travelers, so I will explain.
“Ramen Origin 原点”, first ramen from right.
This soy sauce ramen is the origin of “Human beings everybody noodles.” It has a gentle taste with a lot of bonito broth and the unique sweetness of soy sauce. If you want to enjoy the flavor of the ingredients and the broth as it is similar to Japanese cuisine, or if you are visiting for the first time, this is the ramen you should order.
“Ramen micro”, second ramen from right.
It is a black looking ramen. It is my favorite ramen in this restaurant. Of course, I ordered “Ramen micro” again. It has a salty soy sauce flavor, but it is very flavorful, and the combination of umami and sweetness makes it a ramen that you will never get tired of no matter how many times you try it. If you are visiting with a group, I recommend that one of you order the “Ramen micro”.
“Ramen macro”, third ramen from right.
“Ramen macro” is the most popular ramen at this restaurant. It is a soy sauce ramen in which soup stock is made from fish and shellfish and combined with light soy sauce. It is a very light soy sauce ramen, so it is very healthy. If you come to Japan and eat only fatty foods, this “Ramen macro” may not be enough for you. However, you need to think the other way. “Ramen macro” is the one and only ramen that will reset your body after it has become accustomed to fatty foods.
“Ramen Bone 骨”, the fourth ramen from the right.
The last ramen to be introduced is “Ramen Bone. This ramen is called “Niboshi Ramen,” which is made by combining dried small fish in powder form with soy sauce. You will not find this type of ramen outside of Japan. Japanese people are accustomed to the taste, but there may be pros and cons for everyone. By the way, I love niboshi ramen. If you like niboshi ramen, you may be used to the Japanese taste.

Procedure
- When you enter the restaurant, you will be asked, “Welcome, how many people are in your party?” Please let us know how many people are in your party.
- You will be guided to the counter or a table, where you will choose a menu based on the description above.
- When you choose ramen, you will be asked how thick and how many pieces of chashu pork you want as the default topping. If you choose “thin”, you will be given an Ajitama (seasoned egg) for free.
- When your ramen comes, take out your chopsticks and enjoy your ramen.
- After finishing your ramen, pay the bill. Cash (Japanese yen) only. Tipping is not required.
Eating Report
This time I ordered this “Ramen micro”.
The black soup looks very impressive. It was opened for a limited time in Korea, but I highly recommend it because I think it is a ramen that is not easily available in other countries.
The flavor is a strong soy sauce flavor, but not too salty.
I ordered “thin, one piece” of roasted pork fillet (often used in ramen). If you order thin, you will be served with ajitama (seasoned egg). I recommend it because the ajitama is very tasty. Japanese eggs can be eaten raw, so be sure to give it a try. You will be captivated.
The noodles are made of whole wheat flour and are very sticky and delicious. The noodles are homemade, so you can enjoy the mellow aroma of wheat, and the texture is so smooth that you forget to chew. It is like a drink. You will eat it so fast that you will have to have another bowl of noodles.
Since I went alone this time, I was shown to a counter table. The atmosphere was relaxed and I could see the waiters working right in front of me, so I had a great time. If you go there at night, you may want to order beer as well. It is only a 15-minute walk from Shibuya, so how about having ramen after drinking in the Shibuya area?
